Cajun Chicken & Sweet Potato Meal Prep

Cajun Chicken & Sweet Potato

Makes 3-5 servings:

  • 8 chicken breasts, cut into small pieces
  • 2 tbsp Cajun seasoning
  • 1 tbsp Mixed Italian herbs
  • 3 large sweet potatoes, peeled and diced
  • 2 tomato, diced
  • 1 red onion, finely chopped
  • 2 sticks celery, diced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper
  1. Toss chicken pieces with Cajun seasoning, Italian herbs and olive oil. Leave in fridge for 15 minutes.
  2. Place sweet potato on baking tray. Drizzle with olive oil. Add salt and pepper. Place chicken pieces next to sweet potato.
  3. Bake at 425°F (210°C) for 25 minutes or until sweet potato is cooked through.
  4. Divide chicken, sweet potato, tomato, celery and onion into meal prep containers. Drizzle with lemon juice.
